Banana Muffins – sweetened only by fruit!

These little sugar free banana muffins are a guilt free pleasure…Bella and Poppy particularly love them as there are lots of tasks for the kids to get involved with too. Sweetened only by dates and packed with fruit, nuts and seeds, they make a great addition to a lunch box, a fun snack, a healthier treat or good party food. Mum will love them as much as the kids!

Ingredients:

1 x Large egg, beaten

1 x Large ripe banana (approx. 140g without skin)

50g Finely chopped/blitzed, pitted dates

50g Sifted spelt flour

50g Melted and cooled coconut oil

1/4 tsp Bicarb

Option 1: 25g Chopped (toasted) pecan nuts or

Option 2: 25g Seeds: mix sunflower and chia

Other options: Pinch cinnamon, 1 tsp honey or rice malt syrup, pinch salt flakes

Makes 5 cupcakes

Method

  • Preheat oven to 180˚C
  • Toast Pecans – if using
  • Mash banana, add beaten egg, cooled coconut oil and chopped dates. Add cooled nuts or seeds – reserving a few to decorate on top
  • Sift flour and bicarb, plus salt and cinnamon if using, and fold into banana mixture – be careful to mix minimally or the mixture will go tough when baked
  • Spoon into cupcake cases in a cupcake/muffin tin
  • Decorate with remaining nuts/seeds
  • Bake in the top third of the oven for approx. 10-15 mins until firm to the touch but still moist inside
  • Cool on a wire rack
