Basil Pesto

Who doesn’t love basil pesto?! A perfect ‘up your sleeve’ kids tea, see my tips and you’l always be prepared.

1 Bunch of Basil/approx 2 cups  (Stalks contain lots of flavour and fibre so use them too!)

150ml Olive oil

60g Pine nuts

50g Grated parmesan

1 Clove of garlic

1 Small squeeze of lemon juice

Salt and pepper to taste

Makes a small-medium bowl of pesto

  • Add all the dry ingredients to the food processor and whizz
  • Add oil slowly with the motor on. Using a spatula, scrape down the sizes to ensure all ingredients are mixed together
  • Add salt and pepper to taste and a squeeze of lemon juice
  • To store, cover your bowl with cling film in the fridge

Tip: scoop into ice cube trays or old weaning pots and freeze for up to 1 month – to use just add to hot pasta and it will defrost quickly

Options:  Substitute some of the basil for rocket or parsley, spinach, kale etc…all that green goodness yum! You could even try toasting your pine nuts

How kids can help

  • Ask your little helper to pick or top up with herbs from your garden
  • Shred herbs while you are preparing the other ingredients
  • Taste the pesto and ask your helper for their feedback – get those taste buds fine tuned from an early age!
