Beetroot, Apple and Carrot Slaw

Beetroot Carrot and Apple Slaw in a bowl

This slaw is so simple to knock up and is absolutely heavenly. My gorgeous friend Mel told me about this recipe – Mel is a Paleo follower and I totally agree that this beetroot, apple and carrot slaw recipe oozes health. Kids seem to love it because of the sweetness of the apple! This recipe is really flexible too, so adjust the proportions to suit what your family likes and what you have in your fridge – So win win all around.

Ingredients:

2 large Raw carrots peeled – you could try mixing orange, purple or yellow carrots

1 Medium sized raw beetroot peeled

1 Apple – skin,┬ácored cut into quarters

1 tbs Toasted sesame oil

A squeeze of lemon juice

Sesame seeds to sprinkle

Optional – coriander and or parsley roughly chopped – from your garden

Makes enough to feed 2 adults and 2 kids as an accompaniment to a main dish

Method:

  • Using your food processor on a medium to thick grating setting pass the carrot, beetroot and apple through
  • Turn into a bowl and drizzle with toasted sesame oil and a squeeze of lemon juice, mix to coat evenly and toss through any herbs and sprinkle with sesame seeds

How kids can help

  • You helper can peel your carrots and beetroot – if old enough
  • Mixing your shredded ingredients, sesame oil and lemon juice
  • Picking any herbs from your garden to toss through the slaw
  • Sprinkling sesame seeds
