Brown Rice Crackers – Out Of This World!

Brown Rice Crackers

It was my lovely friend Alison who introduced me to this brown rice cracker recipe that she had found online at Better Health Clinics. While I was making the recipe, I was sceptical about the success of it but my goodness how wrong could I be?! These brown rice crackers are just out of this world and perfect for kids as a snack. I love them with mashed avocado, nut butter and alfalfa or humous – YUM!

Ingredients 

160g Brown rice – well cooked

40g Flax seeds soaked in 50 ml water for 15 mins

2 tbs Sesame seeds

1 tbs Tamari or soy sauce

1 tbs Olive oil

Makes 2 trays

Method:

  • Preheat your oven to 160˚C
  • Blitz all the ingredients together until sticky and fully mixed together – including the 50ml of water you soaked your seeds in. You will wonder what on earth this mixture is! If it’s not sticky, add a splash more water
  • Using a palette knife or similar spread a very fine layer of mixture on a piece of baking paper or place mixture between 2 sheets of baking paper and roll until very thin then remove top baking paper sheet
  • Using a knife make score lines for the size of the cracker you want
  • Place baking paper on a baking tray and cook for approx. 30 mins or until completely dry
  • Slice while hot as they crisp up fast
  • Store in an air tight tin for 4 days – if they last that long!

Tip: When you next cook brown rice, cook a bit extra and make these crackers with your left overs

Options: Try adding different seeds, herbs or spices

  • Tipping ingredients into the blitzer
  • Spreading the rice mixture around the baking paper
  • Making the cracker lines with a (blunt) knife
