Crunchy Kale Crisps

Crunchy kale crisps – yum! When I first tried these, I couldn’t believe how good they were. Seeing my girls eat them who won’t touch kale – my heart melted…

These crunchy kale crisps are made so often in our house and don’t last more than about 5 minutes! Really simple and so satisfying to so see these greens disappear so fast

Bunch of kale (any variety)

Approx 2tbs olive oil

  • Preheat oven to 140˚C
  • Wash and dry thoroughly
  • Cut out the stalk and tear into 3cm pieces
  • Spray sparingly with olive oil/rub oil into the leaves evenly, ensuring a thin full covering
  • Place on a baking tray and bake for 20-25 minutes until dry and crispy

Tip: Be careful to dry kale really thoroughly before baking and to make sure kale doesn’t burn or it will taste bitter.

Options: Add natural salt flakes before serving. Add paprika or other spice before baking

We love kale because… ‘it is the queen of greens’! It is super nutritious, packed full of vitamins (notably A, C and K) along with a host of antioxidants – yum!

How kids can help

  • Washing the kale
  • If you are picking the kale from your garden ask them to harvest it
  • If you are drying it in a salad spinner they will love spinning the wheel
  • Helping you dry your kale with a tea towel
  • Rubbing in the oil (sparingly!)
