Gingerbread man

No Christmas is complete without gingerbread! Whether you have a gingerbread men cookie cutter, a star, christmas tree of other. Kids simply love rolling out and cutting out shapes. The spices make your home smell divine and there will be smiles all around for the lucky recipients. A fun holiday activity for the kids too.


125g Soft, unsalted butter

110g Soft light brown sugar

1 x Egg yolk preferably free range or organic

375g Plain flour

1 tsp Bicarb

3 tsp Ground ginger

175g Golden Syrup


  • Preheat the oven to 180˚C
  • Line 2 baking trays with baking paper or grease your baking tray
  • Sift together the flour, bicarb and spices
  • In a separate large bowl beat the butter and sugar together until pale and creamy – ideally with an electric mixer
  • Add the egg yolk and mix until fully incorporated
  • Add the golden syrup and mix
  • Stir the flour mixture into the butter mixture
  • On a floured surface tip out the dough out and knead for a minute
  • Divide dough into 2 and roll out between 2 sheets of baking paper until approx. 3-4mm thick
  • Refrigerate until totally cold – this helps get a lovely clean cut
  • Cut shapes out
  • Bake for about 7-12 minutes depending on the size of your shapes until golden
  • If desired make a hole to threat ribbon whist cookies are still hot
  • Cool on a wire rack
  • Add any decorations e.g. raisins, ribbons – these can be ‘glued’ with a dot of icing sugar

Options: A large pinch ground cinnamon and mix spice can be added to make the gingerbread more christmassy
