Friendly Meringue Ghosts

Give your scary visitors a ghoulish friendly treat with this meringue ghosts recipe. These spooktastic ghosts are really simple to make and are great fun. Bella and Poppy go mad for meringues – and why not every now and then?! I am sure someone will be desperate to lick the chocolate bowl too…


2  Egg whites

110g Caster sugar

A few chunks of milk or dark chocolate

Makes approx. 15 ghosts


  • Preheat the oven to 130°C and line a baking tray with baking paper
  • In a medium sized bowl whisk the egg whites until they are frothy and firm – this should take approx. 3 minutes
  • Add the sugar a teaspoon at a time, ensuring it is dissolved before adding more until it is all incorporated
  • Spoon the mixture into a piping bag
  • Pipe the ghost shapes onto the baking paper
  • Bake until thoroughly dry and light – approx. 30 minutes depending on size until dry and come away from the baking paper
  • Leave to cool on a rack
  • Melt a little chocolate (in a small bowl placed over a larger bowl filled with hot water )and use a toothpick to draw eyes and mouths

  • Splitting the yolk from the egg white
  • Whisking the egg whites – if old enough
  • Decorating the ghosts
