Pancakes BLT Style!

BLT pancakes

My goodness pancake day has come around so quickly this year…. but it felt right to step back and give pancakes a bit more credit than maple syrup and fruit or even lemon and sugar. So I have gone more savoury than sweet. This way you have breakfast, lunch and dinner covered! Pancakes can be eaten whenever and never fail to impress.

This BLT pancake is the perfect morning comfort food that the whole family will love!


For the pancake:

100ml Whole milk

55g Spelt or white flour

1 Medium sized egg

30ml Water

Butter or coconut oil for frying

For the filling:

3 rashers of bacon

1 Medium sized egg

1 Tomato sliced

A handful of washed, shredded lettuce leaves

A scattering of seeds

Makes 3 – 4 BLT Pancake rolls


To make your pancake mixture:

  • Sieve your flour in a bowl and make a well in the centre
  • Add one of the eggs to the well and slowly add the milk and water while whisking (this method stops lumps forming in your batter)
  • If you have time, leave for 10 minutes (or overnight is fine covered in cling film)
  • Add a tablespoon of coconut oil or a knob of butter to your frying pan
  • When hot, add enough batter to thinly cover the frying pan
  • Cook for several minutes on both sides until golden
  • Turn out your pancake onto a board

For the filling:

  • Either grill or gently fry the bacon until the majority of the fat is rendered and it is golden and crispy
  • Warm a frying pan and melt either a knob of butter or coconut oil
  • Quickly whisk¬†the second egg with a table spoon of water then pour into the hot pan
  • Scatter a few seeds over the top
  • It will only take a couple of minutes to cook – then turn out onto a board and cut into strips
  • Arrange the lettuce, a strip or 2 of egg, a ration of bacon and some tomato towards one end of your pancake and roll up. To hold in place use a cocktail stick or small skewer. Slice in half

Tips: Prepare your bacon and egg while your BLT pancake mixture is resting so everything is ready to eat hot.
