Frozen Raspberry Cacao Bites

So you might have thought porridge was boring… but I hope I proved you wrong! Just in case, I want to give you even more reason to keep coming back to Food For Kids – these raspberry and cacao bites, adapted from an I Quit Sugar recipe from Sarah Wilson, are simply brilliant. Not only are they great for kids, but are perfect for an after dinner petit four – just make sure you double up your batch; half for the kids and half for you – it’s good to keep things fair!

Ingredients:

35g Coconut oil

20g Shredded coconut

2 tbs Runny honey/rice malt syrup

2 tbs Cocoa or cacao powder

A handful of crushed frozen raspberries

Makes 5-6 ice cubes

Method

  • Melt syrup/honey over a gentle heat then mix well with coconut oil – until melted fully.
  • Add shredded coconut, cocoa or cacao powder and any other optional ingredients
  • Pour into an ice cube tray and sprinkle crushed raspberries on the top
  • Freeze the cacao bites for 1 hour – or until frozen

Options: trying adding cacao nibs, toasted (chopped) nuts, berries, raisins etc… these create a wonderful texture and add extra sweetness

How kids can help

  • Your special helper can help you measure your ingredients out
  • Depending on age they may be able to mix the honey as it melts (being super careful of the heat)
  • Spooning the cacao bite mixture into the ice cube trays
