Strawberry Pancakes

We love pancakes – we particularly love strawberry pancakes! The sticky fingers and squeals of delight at the table will make you wonder why you don’t make these more often. If you have 5 minutes to pull together the ingredients the night before, all you have to do is cook them (and perhaps drop a few on the floor!)


100ml Whole milk

55g Spelt flour

Strawberries or other fresh fruit

30ml Water

1 Egg

Coconut oil or butter for frying

Makes Approx. 3 depending on the size of your frying pan


  • Sieve your flour in a bowl and make a well in the centre
  • Add the egg to the well and slowly add the milk and water while whisking (this method stops lumps forming in your batter)
  • If you have time, leave for 10 minutes (or overnight is fine covered in cling film)
  • Add a tablespoon of coconut oil or a knob of butter to your frying pan
  • When hot, add enough batter to thinly cover the frying pan
  • Cook for several minutes on both sides until golden
  • Turn onto a chopping board, add your filling – fresh berries, jam, honey seeds, coconut etc… roll the pancake up, then slice
  • Serve with fresh fruit or whatever you like!

Tips: Make the night before so all you have to do is cook the pancakes. Remember your first one is usually not so good so don’t worry!

Options: Try with different flours e.g. spelt, wholemeal, buckwheat. You could use coconut milk or almond milk instead of cow’s milk. For fillings: honey, maple syrup, jam, seeds, chopped nuts, frozen or fresh berries, banana, yoghurt etc… whatever you like to eat! You could even make it a savoury pancake…
