Tofu Skewers – Quick and Easy

Tofu Skewers

I hope you are bouncing into 2015 – I particularly love January as it is a chance to assess and make positive improvements to our life. Health is high on the agenda and of course trying to make better choices.

These quick and easy tofu skewers are great to have up your sleeve. Serve with rice and steamed veggies. You might even like to have them for your supper too!

Ingredients:

200g Plain, firm tofu, cut into 2-3cm squares

30ml Soy sauce

2 tbs Rice flour – or plain flour works fine too

1 tbs Sesame seeds

1/2  Spring onion sliced

1 x Small- medium garlic clove finely grated

5g/ 1 cm Piece of ginger finely grated

Oil to fry – I prefer olive but sunflower, vegetable or nut is fine too

Dash of sesame oil

Feeds 2 kids

Method:

  • Place tofu cubes in a bowl and marinade with soy for 30 minutes – don’t worry if it is less
  • Strain and reserve the soy marinade
  • Pat dry then roll the tofu in the flour
  • Heat the oil to a medium heat and fry the tofu, turning the cubes to ensure each side is golden
  • Once the tofu is cooked – add the ginger and garlic for 1 minute, being careful not to burn it
  • Place on skewers, drizzle a little sesame oil over the top and sprinkle with sesame seeds and chopped spring onion
  • Use the marinade as a sauce to accompany
  • Serve with rice and steamed veggies

Options: If your kids don’t like garlic or ginger, just reduce the quantity or omit

  • Arranging the tofu on the skewers
  • Adding the sesame oil and adding the garnishes
